At Houston Baptist, Zappe started his college career. In his rookie season of 2017, he started nine games and threw for 1,548 yards, five touchdowns, and 10 interceptions while also scoring twice on the ground.
Zappe completed 357 of 560 passes for 3,811 yards, 35 TDs, and 15 INTs in his second season with the Huskies. During a condensed 2020 season, he threw for 1,833 yards, 15 touchdowns, and one interception in four games.
